Yesterday, I made some lemon cupcakes with a lemon buttercream. Yummy, fresh and easy to make. I used a box of yellow cake mix. I added some lemon juice to the water you're supposed to add to the mix. For the frosting, I mixed a cup of butter with 2 1/2 cups of powered sugar. And another squeeze of lemon juice. I went easy on frosting the lemoncakes, and sprinkled a little lemon peel on top. I used the juice of half a lemon. They went great with some Cooks Extra Dry. I love long weekends.
